Oxtail comes from the tail of cows, it is skinned and cut into sections. Each section has a tailbone with marrow in the centre and meat surrounding the bone. The oxtail is a gelatine-rich meat and best used in slow-cooked dishes. When consumed, beef oxtails are a great source of protein, calcium Iron and vitamins, with a good amount of monounsaturated fat and saturated fat.
